Bourbon Twin Chocolate Mousse
Dark chocolate Mousse:
- Dark Compound Chocolate- 150 gm
- Fresh Cream – 150 gm
- Whipped cream-100 gm
White chocolate Mousse:
- White compound chocolate- 130 To 150 gm
- Fresh Cream- 100 gm
- Whipped Cream- 50 gm
Bourbon Biscuits- 10 biscuits
Bourbon twin chocolate mousse Method:
1.Heat fresh cream and dark compound chocolate together till it becomes smooth truffle.Transfer to a bowl and allow to cool down.
2.Heat fresh cream and white compound chocolate together till it becomes smooth white chocolate truffle.Transfer to a bowl and allow to cool down.
3.First mix whipped cream with dark chocolate truffle and then with white chocolate truffle.Refrigerate both till thickens enough pipe.In the mean time cut bourbon biscuits into small pieces and keep ready.
4.Now take glasses to set the mousse and add chopped bourbon biscuits first.Then pipe white chocolate mousse on top of that.Again add chopped bourbon biscuits and then pipe dak chocolate mousse on top of that.
5.Finally pipe some melted dark chocolate truffle to finish on top.Set in refrigerator for atleast 2 hours.Once set garnish with white chocolate flakes and bourbon biscuits.Now Bourbon twin chocolate mousse is ready to serve.
You can also use bitter couverture chocolate if you want your mousse to be more bitter and strong.In case no commercial whipping cream is available whip 100 gms of high fat fresh cream with 40 gms of sugar on bed of ice using a bowl.Vanilla essence can also be added in the whip cream.Make sure to keep the mousse covered while setting in fridge.
