Oatmeal Raisin Cookies Recipe
Oatmeal and raisin cookies recipe made with butter is a healthy option to have as a snack or with hot beverages.This recipe uses a simple drop in method and the cookie will spread itself into round shape while baking in the oven.

1.Roast the oats in the oven for few minutes and keep it aside.Remove the stem of the raisins,wash them and keep aside.
2.Cream butter with powder sugar till it becomes soft and fluffy ,then add egg yolk with vanilla essence.Cream well.
3.Now add flour along with oats and raisin.Fold in gently.Refrigerate the mix for an hour.
4.Remove the cookie mix from the fridge after cooled enough.Drop cookie mix on a lined tray using hand.Each drop approximately 30 to 40 gm depending on the size of the cookie needed.
5.Bake in a pre-heated oven at 180 c for about 12 to 14 minutes depending on the oven.Once baked remove from the oven ,cool it completely before serving.Store in a airtight container to retain freshness.
It is important to roast the oats in the oven before using in order to achieve the crispiness in the cookies.Salted as well as unsalted butter can be used for this recipe depending on the saltiness one prefers.Always use parchment paper to line the tray,it will help release the cookie easily. This cookie can be either made into chewy or crispy cookies.In case of crispy cookies bake for 14 minutes.
